Thyme essential oil is obtained by steam distillation of the flowers and leaves. It has a fresh, pungent and light herbal scent. Some of the best locations for growing thyme and distilling its essential oil are France, Greece, Morocco, and Spain. In the past, it was believed to bring courage to those who use it, so its name derives from both the Greek word for soul, 'thymos', and the Egyptian word 'tham' where thyme was used in embalming and mummification processes. The Greeks used it for purification in their baths and temples.
